Apple ketchup

This homemade ketchup recipe combines the sweetness of apples, the rich aroma of onions and garlic, along with the spicy notes of star anise and coriander. The sauce is made with canned tomatoes and apple cider vinegar, giving it a slight tang. It’s perfect for serving with meat, potatoes, or as an accompaniment to your favorite dishes.

Ingridients:

  • 1 onion
  • 1 garlic clove
  • 2 apples
  • 1 tbsp olive oil
  • 40 g cane sugar
  • 2 anise seeds
  • 10 coriander seeds
  • salt and pepper
  • 500 g canned tomatoes
  • cream 30 ml
  • apple cider
  • vinegar

Instructions:

Peel and chop the onion and garlic. Peel the apples and cut them into cubes.

In a deep pan, heat the oil. Add the onion, garlic, and apples. Sauté for 3-4 minutes, trying not to brown them.

Add the sugar, star anise, coriander seeds, salt, and pepper. Caramelize the onions and apples in the sugar.

Add the tomatoes and vinegar. Simmer the sauce over very low heat for about 45 minutes until the mixture reduces and thickens.

Blend all the ingredients into a smooth purée, then strain through a fine sieve.

Pour the ketchup into a bowl and let it cool. If not using immediately, transfer it to sterilized jars, seal, and store in the refrigerator.
