Baked carrots with granola

Roasted carrots with spicy chili flakes and a refreshing lemon sauce make a delightful side dish that adds flavor and aroma to any meal. This simple recipe quickly turns ordinary carrots into a tasty and healthy treat. Serve them hot, garnished with granola for added texture and taste.

Ingridients:

700 g carrots
1 tbsp olive oil
1 tsp. chili pepper flakes
salt and pepper to taste
1 tsp olive oil and 1 c.l. lemon juice
1 c.l. thyme leaves
3 c.l. granola

Instructions:

Wash the carrots thoroughly. If they are large, cut them into halves or quarters lengthwise

In a bowl, mix olive oil, chili flakes, and salt.

Place the carrots in a baking dish, pour over the oil mixture, and toss to coat each carrot thoroughly. Roast in a preheated oven at 200°C (390°F) for 40 minutes.

Mix 1 teaspoon of olive oil with lemon juice. Transfer the carrots to a serving plate, drizzle with the olive oil and lemon juice mixture, and sprinkle with granola.
