Galette with blue cheese and pears

This delicious galette with caramelized onions, pears, and blue cheese is perfect for a festive table or as an elegant snack. The crispy dough, made with Parmesan and softened butter, pairs beautifully with the sweet-tart onions, savory cheese, and juicy pears. Topped with thyme and drizzled with honey, this galette is even more delightful. Try this recipe and impress yourself and your guests!

Ingridients:

1 tbsp. olive oil
1 large onion, sliced into thin circles
2 tbsp honey, plus an additional 2 tbsp apple cider vinegar for serving
150 g blue cheese, sliced
3 small pears, thinly sliced
1 egg yolk
5 g thyme leaves

Dough: 160 g wheat flour
140 g spelt flour
100 g grated parmesan
1/2 tsp. sea salt
150 g cold butter, cut into pieces
2 cm 1 egg
1-2 tbsp. ice water

Instructions:

In a food processor, combine flour, Parmesan, and sea salt. Add diced cold butter. Use a knife to quickly cut the cold butter into the flour, mixing thoroughly. Add the egg and water, and quickly mix to form a dough.

Heat oil in a small skillet over medium heat. Add the onion slices, honey, and vinegar, and cook for 10-12 minutes until the onion is soft.

Preheat the oven to 200°C (400°F). Roll out the dough between two sheets of floured parchment paper into a rectangle measuring 45 x 30 cm.

Spread the onion mixture over the dough, leaving a 5 cm border around the edges. Add blue cheese and pear slices. Fold the edges of the dough over the filling and press down. Brush the top of the dough with egg yolk and sprinkle with thyme leaves.

Transfer the prepared galette to a large baking sheet and bake in the oven for 25-30 minutes, or until the dough is golden brown. Drizzle with honey before serving.
