Ricotta pancakes
Melt the butter and let it cool slightly. Add eggs, ricotta, vanilla extract, and milk. Mix until smooth.
In a separate bowl, combine all dry ingredients: sifted flour, sugar, baking soda, and salt.
Gently add the dry mixture to the wet ingredients, stirring until well combined and smooth.
Cook pancakes, about 10 cm in diameter, on medium heat for 1-2 minutes on each side, until golden brown.
Serve the pancakes warm with honey, jam, and fresh berries.
